March Produce
March is here - one of my favorite months of the year! More sun in the PNW, and my birthday month! I also love all of the seasonal produce March has to offer. Here are my favorites from this month’s seasonal produce and ways to add them into meals:
Apples: as a snack with peanut butter or chopped up finely in a kale salad.
Asparagus: a side dish to accompany red meat, roasted in the oven in foil with olive oil, salt, pepper, garlic powder, and shredded Parmesan
Avocados: of course on top of sourdough, a salad, or in tuna/chicken salad
Bananas: smoothies or a pre-workout snack with peanut butter
Beets: chopped into quarters and roasted in the oven with olive oil, salt, pepper, and garlic powder or as an addition to a salad
Broccoli, Brussels sprouts, cabbage: these cruciferous veggies are great for roasting or making a shredded salad. If you don’t feel like doing the work to shred, Trader Joe’s sells them pre-shredded in packages in the salad section
Leeks: basic veggie in a soup, in combination with carrots, white onion, and celery
Oranges + Tangerines: add to a high protein breakfast for an extra boost of carbs and fiber. As a dessert, mix Greek yogurt with melted chocolate and dip your orange slices in it - SO GOOD
Lemons + Limes: add to any bowl for more flavor/acidity. Add to a homemade salad dressing, and add to your water to add flavor
Sweet onions: cook with ground beef for a taco inspired bowl and as a base to all soups
